BREAD PUDDING 
1 1/2 lbs. French bread
2 qt. milk
1 stick butter, melted
2 1/2 c. sugar
1/2 tsp. salt
1 tsp. vanilla
4 eggs
1 lg. pkg. low calorie cream cheese

CARAMEL:

1 c. sugar for caramel

Cut the crust off the bread. Break bread into pieces and soak in milk for 15 minutes. Mix melted butter, eggs, sugar, salt, vanilla and cream cheese. Add bread and mix. Set aside.

In 9 x 13 inch mold, metal or corning dish, pour 1 cup sugar and heat over 2 burners on stove, stirring until sugar turns the color of honey. Pour pudding over caramel and bake at 375 degrees until golden brown, about 1 hour.
