MEXICAN CORNBREAD 
1 box Jiffy cornbread mix, follow directions on box
1/2 c. whole kernel corn
1/3 c. shredded Cheddar cheese
1/4 c. finely chopped green pepper
1 chopped jalapeno pepper
1/3 c. bacon (crumbled)

Heat oven at 350 degrees. Mix cornbread according to instructions on box. Broil 6 slices (or less) bacon; drain and crumble. Grease pan with butter and spread crumbled bacon on to pan. Mix remaining ingredients into cornbread mix. Spoon into pan. Bake approximately 20-25 minutes.
