1 gallon peeled & coarsely ground zucchini
1 lg. can (46 oz.) unsweetened pineapple
1 1/2 c. lemon juice
3 c. sugar
yellow food coloring to desired color

Mix all ingredients together and simmer for 20 minutes. Pack in pint jars and seal. Process in boiling water bath for 30 minutes. Substitute for crushed pineapple in cooking.
