BARLEY CASSEROLE 
3 tbsp. butter
1 lg. onion, chopped fine
1/2 c. celery, chopped fine
1 clove garlic
1 1/2 c. pearl barley, rinsed
3 c. broth
Cook chicken or hamburger

Heat oven to 350 degrees. In a 3 to 3 1/2 quart range to oven casserole melt butter over medium heat. Stir in barley and vegetables. Cook about 5 minutes, until it starts to brown. Add broth and meat. Increase heat to medium high and bring to a boil. Cover and place in oven. Bake 1 hour or until barley is tender.
