JAMES BEARD'S FABULOUS ONION RINGS | |
Several lg. onions 2 c. flour 1 c. beer (any kind) Salt Oil for frying Mix flour and beer. Beat pretty well, no lumps, you hear! Also do this in a large bowl. Cover, let set at room temperature for 3 hours. You can be doing something else in the meantime like cutting the onions. (When you buy the onions, don't pick those that have multiplied--get some big yellow ones.) Slice them about 1/4 inch thick so they make a ring. Store in refrigerator. Heat oil to 350 degrees. Put oven on low and put paper bag on cookie sheet. Dip onion rings in batter, fry a few at a time. Turn over when they float. Drain on heated bag in oven. These are just wonderful. No calories! |
