MOM'S FRIED RICE 
2 c. uncooked rice
1/4 of whole ham, diced
1 stalk celery
1 bunch green onions
3-4 tbsp. soy sauce
1 or 2 eggs
1 tomato (optional)
3 tbsp. oil

Steam rice according to directions, let cool. Fry ham in 3 tablespoons oil for 5 minutes, if pre-cooked. Add vegetables and stir fry for approximately 5-10 minutes. Add rice and more oil, if needed. Stir often for 10-15 minutes over medium heat. Add soy sauce and mix in well until rice is a light brown color. Serves 4.

Add fresh diced tomato until warmed. Garnish with scrambled egg, celery and green onions.

OPTIONAL: Pre-cooked ham-flavored turkey is very good and much less expensive.
