ANTIPASTO 
1 sm. head Iceberg lettuce
8 sweet pepper rings
8 hot peppers (pepperoncini)
16 black olives, unpitted
8 salami slices
8 Mozzarella cheese slices
8 Provolone cheese slices
8 Prosciutto ham slices
8 artichoke hearts
8 sm. mushrooms, whole
3 tomatoes, wedged in 6's
8 anchovies
4 parsley sprigs for garnish

Wash lettuce and shake dry. Tear lettuce into bite-size pieces and divide equally among four salad plates. Roll up the sliced meats and cheeses and arrange two slices of each on each of the four salad plates. Then divide the remaining ingredients by four and arrange them neatly on each of the salad plates. Garnish each of the salads with the sprigs of parsley. NOTE: You should have 2 wedges of tomato left which may be eaten for a healthy snack. Serves: 4.
