APPLE POUND CAKE 
2 c. sugar
1-1/2 c. vegetable oil
3 large eggs
3 c. plain flour
1 tsp. baking soda
1 tsp. salt
1-1/2 tsp. vanilla
3 c. diced firm apples (winesap)
1 c. black walnuts, chopped
3/4 c. flaked coconut

Mix as you would any cake by hand. Add eggs one at a time, beating after each addition. Spoon batter into greased and floured tube pan.

Bake at 300°F for 1 hour and 20 minutes, or until done.

Icing:

1 c. brown sugar
1/2 stick butter
1/4 c. milk
1 tsp. vanilla

Cook sugar, butter, and milk for five minutes, stirring constantly. Add vanilla, pour over cake while warm.
