1 1/3 c. oil
2 c. sugar
3 eggs
3 c. sifted flour
1 tsp. salt
1 tsp. baking soda (baking)
1 tsp. vanilla
1 tsp. cinnamon
4 c. apples, chopped in sm. pieces
1 c. chopped pecans (pronounced pea-kans as they're called in Georgia!)

Preheat oven to 325 degrees.

Combine oil, sugar and eggs in a mixing bowl. Beat for 3 minutes at medium speed. Add flour, salt, cinnamon, soda and vanilla. Beat until well blended. Fold in apple pieces and pecans.
