CARAMEL APPLE CAKE 
1 3/4 c. all-purpose or unbleached flour
1 1/2 c. firmly packed brown sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
3/4 c. butter, softened
1 tsp. vanilla
3 eggs
1 1/2 c. finely chopped peeled apples
1/2 to 1 c. chopped nuts
1/2 c. raisins, if desired

FROSTING:

2 c. powdered sugar
1/4 tsp. cinnamon
14/ c. butter, melted
1/2 tsp. vanilla
4-5 tsp. milk

Heat oven to 350 degrees. Grease and flour 13x9-inch pan. Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, brown sugar, baking powder, baking soda, salt, 1 1/2 teaspoons cinnamon, 3/4 cup butter, 1 teaspoon vanilla and eggs at low speed until moistened. Beat 3 minutes at medium speed. By hand, stir in apples, nuts and raisins.

Pour batter into greased and floured pan. Bake at 350 degrees for 30-40 minutes or until toothpick inserted in center comes out clean. Cool completely. In small bowl blend powdered sugar, 1/4 teaspoon cinnamon, 1/4 cup butter, 1/2 teaspoon vanilla and enough milk for desired spreading consistency. Frost cooled cake. Yield: 15 servings.
