LEMON CHEESECAKE BARS 
2/3 c. finely crushed graham crackers
1/2 c. all-purpose flour
1/2 c. chopped walnuts
1/4 c. sugar
1/2 c. butter, melted
1 (8 oz.) pkg. cream cheese, softened
1/3 c. sugar
1 egg
1/2 tsp. grated lemon rind
1 tbsp. lemon juice
2 tbsp. finely crushed graham crackers

Stir together first 4 ingredients. Add melted butter; mix until crumbly. Pat into ungreased 9"x9"x2" baking pan. Bake at 350 degrees for 10 minutes.

Cream together cream cheese and 1/3 cup sugar. Add egg, lemon rind and lemon juice; mix well. Pour over baked layer. Bake at 350 degrees for 20 to 25 minutes. Sprinkle with the 2 tablespoons graham cracker crumbs. Cool; cut into bars. Store in refrigerator. Makes approximately 25 bars.
