CHOCOLATE MINT PARFAIT BARS 
1 pkg. chocolate mint cake mix
1/3 c. butter
1 egg

FILLING:

1 env. unflavored gelatin
1/4 c. boiling water
4 c. powdered sugar
1/2 c. butter
1/2 c. Crisco
1/4 tsp. peppermint extract

FROSTING:

1 c. chocolate chips
3 tbsp. butter

Combine the 3 base ingredients in a bowl until crumbly. Press into greased jelly roll pan and bake 10 minutes in 350 degree oven.

Dissolve gelatin in hot water. Cool. In large bowl combine the softened gelatin, 2 cups powdered sugar and the rest of the filling ingredients. Beat for 1 minute or until creamy. Blend in the other 2 cups powdered sugar and beat until smooth. Spread over crust.

Melt butter and chips together. Stir until smooth and spread over filling. Refrigerate until hard.

Variation: Can omit mint flavoring and food coloring. Substitute vanilla flavoring.
