BEST CHOCOLATE CHIP COOKIES 
1 lb. butter, softened
1 1/2 c. sugar
1 1/2 c. light brown sugar
2 tsp. vanilla
3 eggs + 1 egg white
1 tsp. salt
2 level tsp. baking soda
4 1/4 c. unbleached flour
1/3 c. wheat bran
1/3 c. oat bran
30 oz. chocolate chips (I also add nuts)

Place butter, sugar, vanilla, eggs, salt and baking soda in bowl. Quick stir. Add flour, brans and chips. Mix briefly with spoon, then mix with hand (much easier this way). Scoop out portions with ice cream scoop. Freeze dough portions on tray, then store in plastic bag for future use.

Let cookie defrost briefly. Press down with flat of bread. Bake at 350 degrees for 10 to 12 minutes. Yield: 42 cookies.
