1 box Duncan Hines lemon cake mix
1/2 c. oil
4 eggs
1 (11 oz.) can mandarin oranges with juice (optional)

Or follow box directions instead. Mix ingredients until well blended with electric blender. Bake in 3 greased and floured 9-inch cake pans at 350 degrees for 25-30 minutes or until top springs back.

ICING:

9 oz. Cool Whip
3 3/4 oz. instant lemon pudding
1 can crushed pineapple, pouring off half of juice

Mix until well blended with a spoon. If too thick, add some juice; too thin, add more instant pudding.
