CAJUN PEAS AND RICE 
3 c. cooked rice
2 cans black-eye peas with bacon & jalapenos
1/2 can Campbell's black bean soup
1 tsp. poultry seasoning
2 dashes cayenne pepper
6 oz. sour cream

Spread cooked rice in bottom of casserole dish. Mix remaining ingredients and pour over rice. Bake 30 minutes at 350 degrees.
