RECIPE COLLECTION
“MOIST CHOCOLATE CAKE” IS IN:

MOIST CHOCOLATE CAKE 
2 c. sugar
2 c. flour
1 tsp. baking powder
2 tsp. baking soda
Dash salt
1/2 c. cocoa
1/2 c. vegetable oil
1 c. boiling water
2 eggs
1 c. milk
1 tsp. vanilla

Mix together, putting eggs and milk in last. Cocoa can be dissolved in boiling water before adding. Batter is very runny. Put in one 9 x 13 or two 8 inch pans. Bake at 350 degrees for 35 minutes or until done.

DIETITIAN'S NOTE:

Decrease calories slightly by using skim milk and 1/2 cup egg substitute. Enjoy in moderation.

FROSTING FOR MOIST CHOCOLATE CAKE:

3/4 c. cocoa
4 c. powdered sugar
1/2 c. butter
1 tsp. vanilla
1/2 c. evaporated milk

Mix cocoa and sugar together first; add remaining ingredients. Stir until smooth.

DIETITIAN'S NOTE: Use evaporated skim milk and butter instead of butter.

My family LOVES this recipe! The only 2 things that could make this better are if the recipe included directions on making it a round cake, and if it didn't have spongey look to it. I think the water gives it that look. Do you know if I could replace the water with milk to change that, CM? But I LOVE the frosting recipe! I HIGHLY recommend it! So good!

I love this recipe, best I've ever made. I made it last week. I'm making another cake today for my fathers 50th birthday. I'm 15 and this is so easy, simple and delicious. One thing I do differently with all my cakes is I add a pudding cup to make it moist, this cake doesn't even need it. I love it so much!

Oh, one thing I forgot to mention....the frosting. Delicious, but I used a beater on low to break up the butter and distribute the flavor. Next time I'm going to cut back a bit on the confect. sugar in the frosting...it was very very very sweet. No complaints from family who ate every bit of it, though! If you use the beater, beat just until you no longer see butter clumps! I went a little longer and that thinned the frosting just a touch too much - refrigeration took care of that, but I'll make these changes next time!

So easy to make. I used Ghiradelli sweetened chocolate & cocoa premium baking cocoa, which made it DELICIOUS. Lightly greased pan also. As one reviewer here said, I too was worried about how runny it was, especially adding milk last. Just stir slowly, make sure everything is equally distributed, pour the very runny batter in the pan, and don't worry about it - it bakes beautifully!

I can't believe it - this cake is amazing!!! Never thought I could bake a cake like this in a million years! I just decreased my sugar from two cups to one, as the icing will compensate for the sweetness thus reaching a balance of flavor in your mouth.

Although the recipe did say 'batter is very runny', i was concerned with just how liquidy it really was. All of my doubt was for nothing. The cake came out perfect - very delicious. I will definitely use this recipe again.
