GINGER BREAD MUFFINS 
1 c. sugar
2 eggs
2 c. buttermilk
1 lb. or 3 3/4 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
2 tsp. ginger
1 tsp. baking soda
1 c. molasses
1/2 c. melted shortening

Cream sugar and eggs. Add remaining ingredients. Bake at 400 degrees for 20 to 25 minutes. Makes 3 dozen.
