MAMA'S PINEAPPLE CAKE FILLING 
1 layer cake
1 lg. can crushed pineapple
1 c. sugar
1/2 stick butter
1 egg, beaten well
1 heaping tbsp. flour
Juice of 1/2 lemon

In large saucepan combine pineapple, sugar, butter, egg, flour and lemon juice. Start on low heat and simmer until thick enough to spread. Cool; spread on top of bottom layer, then around sides of layer. Continue each layer in this manner. Filling doesn't have to be cold, only cool. Sides and top of 4 layers.

Love this recipe! I used Duncan Hines pineapple cake mix and I substituted the sugar for same amount of brown sugar. I have made it twice in 2 weeks and my family and friends love it! Made it for my friend's birthday and she loved it so much that she made it in the same week; her family really enjoyed it! Refrigerated, it makes a wonderful "summer dessert".
