GREEK PASTITSIO 
2 qts. water
2 tsp. salt
1/2 lb. Ziti
2 tbsp. butter
2 med. onions, chopped
1 lb. ground chuck
2 (8 oz.) cans tomato sauce
1 tsp. salt
2 cloves garlic, minced
2 tsp. ground cinnamon
3 tbsp. butter
3 tbsp. flour
2 1/4 c. milk
3 eggs
Dash salt, pepper and nutmeg

Bring water and 2 teaspoons salt to boil. Add zitti; cook until tender but firm to the teeth. Drain. Heat 2 tablespoons butter; add chopped onion. Cook until golden brown. Add meat, sauteing until it has lost its red color. Add tomato sauce, 1 teaspoon salt and 1 teaspoon cinnamon. Simmer 20 minutes.

Grease a 13x9x2 inch baking dish. Add half of the zitti. Top with meat sauce. Add remaining zitti. Preheat oven to 350 degrees. Melt remaining 3 tablespoons butter and stir in flour. Remove from heat; slowly stir in milk. Beat with wire whisk until smooth; simmer 5 minutes.

Remove from heat. Beat eggs slightly. Slowly add hot cream sauce, beating constantly. Season to taste with salt, pepper and nutmeg. Pour sauce over zitti. Sprinkle top with cinnamon. Tap pan hard on counter top so that sauce goes to bottom. Bake 35 minutes or until the custard is firm. Makes 6-8 servings.
