SELKIRK BANNOCK 
4 c. flour
1 tbsp. sugar
1/2 c. sugar
1 c. golden raisins
1/2 c. candied orange or lemon peel, finely chopped
1 pkg. yeast
1/4 c. butter
1 1/4 c. warm milk
1 c. currants

Dissolve yeast with 1 tablespoon sugar in 1/4 cup warm water. Melt butter in the milk while warming. Set aside until tepid. Stir into yeast mixture. Beat in one cup flour; stir in sugar and remainder of flour. The dough will be rather soft and difficult to handle.

Turn out on a well-floured board and knead lightly. Let rise in a greased bowl, covered, until doubled. Punch down, knead in fruits and shape into a ball. Place on greased baking tray; cover and let rise again. Bake at 350 degrees. Brush with honey before removing from oven. The loaf does not rise very high, so don't think you've done something wrong.
