NACHO CASSEROLE 
1 1/2 lbs. ground beef
1 (10 oz.) can Rotel, diced
3/4 c. water
1 pkg. taco seasoning mix
1 lb. Velveeta cheese, cubed or 1 pkg. grated Velveeta cheese
1 (11 oz.) pkg. tortilla chips

Brown meat; drain. Add Rotel, water and taco seasoning. Simmer, uncovered, 5 minutes, stirring occasionally. Stir in half of Velveeta cheese. Place chips in 13 x 9 inch baking dish, cover with meat mixture. Bake at 350 degrees for 30 minutes. Top with remaining cheese and continue baking until cheese on top melts.
