LATKES - CHANUKAH 
6 lg. potatoes, shredded
1 lg. apple, grated
1 med. onion, grated
3 eggs
Oil for frying
1 tsp. cinnamon
1 tsp. salt
1 tsp. garlic
1 tbsp. parsley

Heat oil in skillet. Mix all the ingredients together. Shape into pancakes. Put pancake in hot oil one at a time. When one side is brown, flip over and wait until that side is brown. Drain the pancakes in paper towels. Serve.

Sour cream or applesauce are usually the traditional toppings for the latkes. Cholesterol watchers can substitute eggs with Egg Beaters.
