APRICOT DELIGHT 
1 (3 oz.) pkg. apricot gelatin
1 c. boiling water
1 c. cold water
1 (No. 2) can crushed pineapple, drained (save juice)
2 bananas, sliced
2 c. sm. marshmallows

TOPPING:

1/2 c. pineapple juice
1 tsp. butter
1/2 c. sugar
1 tbsp. flour
1 sm. pkg. cream cheese
1 sm. c. Cool Whip
1/2 can coconut

Dissolve gelatin in boiling water, then add cold water and refrigerate. When gelatin is slightly set, add remaining ingredients. Mix and refrigerate until congealed.

Combine pineapple juice, butter, sugar, and flour and cook over low heat until thick. Add cream cheese. When cool, add Cool Whip. Spread over congealed mixture and sprinkle with coconut.
