ALPINE ASPARAGUS QUICHE | |
1 unbaked 9 inch pie shell 1 pkg. (10 oz.) asparagus 1/2 c. finely chopped onion 1/4 tsp. nutmeg 3 eggs, slightly beaten 3/4 c. milk 3/4 c. half and half 1 tsp. salt Dash of pepper 1 c. shredded Swiss cheese Bake pie shell at 400 degrees for 8 to 10 minutes. Cook asparagus, drain. Combine milk, cream, onion, salt, nutmeg and pepper in a saucepan. Bring to a boil, then simmer 1 minute. Stir hot mix into eggs. Sprinkle 2/3 of cheese into pie shell. Arrange asparagus over cheese, trimming spears if necessary. Pour in egg mix. Sprinkle remaining cheese over top. Bake at 375 degrees for 20 to 25 minutes or until silver knife inserted 1 inch from center comes out clean. Serves 6. |
