ZUCCHINI BREAD | |
1 c. sugar 1 tsp. lemon rind, optional 2 tsp. baking powder 1/2 tsp. baking soda 1/2 c. oil 1/2 tsp. orange extract 1/2 tsp. salt 1/8 tsp. nutmeg 2 eggs 1 1/2 c. flour 1 c. grated unpeeled zucchini 1/2 c. chopped nuts Preheat oven to 375 degrees. Sift flour, baking powder, soda, salt and nutmeg. Beat eggs until frothy. Then add sugar and oil and extract. Stir in the zucchini. Then add flour mixture. Stir in the chopped nuts. Pour into well greased and lightly floured loaf pan and bake for 1 hour or until a toothpick inserted into the center of loaf comes out clean. Turn bread out onto wire rack and cool for at least 1 hour before cutting. |
