NO - GUILT COFFEE CAKE 
3/4 c. sugar
2 tsp. baking powder
1 egg white
1/2 c. skim milk
1/4 c. vegetable oil
1 1/2 c. flour
1 tsp. cinnamon
1 c. chopped nuts or raisins or fruit: chopped apples, blueberries, sweet cherries, etc. (if the fruit is really juicy, add another 1/2 c. flour)

TOPPING:

1/4 c. brown sugar
1 tbsp. flour
1 tsp. cinnamon

EQUIPMENT:

8 x 8 inch pan

Quickly blend all the cake ingredients, taking care not to crush the fruit. Pour into a greased 8 x 8 inch pan. Mix the topping ingredients and sprinkle over cake. Bake at 375 degrees for about 20 minutes or until done in the center. Serve warm.
