ZUCCHINI - PINEAPPLE CAKE | |
3 eggs 2 c. sugar 1 c. cooking oil 2 tsp. vanilla 1 tsp. coconut flavor 2 c. zucchini, peeled and grated 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 3 c. flour 1 c. flaked coconut 1 c. crushed, drained pineapple 1/2 c. raisins Beat eggs until fluffy. Add sugar, vanilla, coconut flavored oil and zucchini. Blend well. Add dry ingredients. Mix well. Stir in pineapple, raisins and coconut. Bake in 1 large or 2 small loaf pans. Bake in 325 degree oven for 1 hour. |
