BARBECUED CHICKEN 
3 (3 1/2 lbs.) broiler fryer (I use breasts)
1/2 c. water
1 lg. onion, sliced
1/2 c. catsup
2 tsp. mustard (I don't use much)
1/2 c. cooking oil
1/4 c. vinegar (I don't use that much)
1/2 c. maple syrup
1 tsp. hickory smoked salt
1 tsp. pepper

Combine catsup, mustard, oil, vinegar and syrup and stir to blend, set aside. Wash, drain and pat dry chicken parts. Place skin side up in small roaster or baking pan and pour 1/2 cup water in bottom. Peel and slice onion and tuck slices in and around chicken pieces. (Optional - salt lightly.) Sprinkle with hickory smoked salt.

Place in an oven and bake at 375 degrees for 30 minutes. Then pour sauce over chicken and bake about 40 minutes longer, basting once or twice.
