TERRIFIC CHICKEN PASTA 
When I make this recipe for our family, I add 1 tablespoon of peanut butter and 1/2 teaspoon red pepper flakes (for heat). Top with chopped peanuts. Yummy! Rice can be substituted for pasta.

olive oil
1 small onion, diced
2 cloves of garlic, diced
2 cups cooked chicken
2 tsp. Garam Masala
1 tsp. curry powder
1 (15 oz.) can petite diced tomatoes, drained
1 can coconut milk (not sweetened creme de cacao)
salt, to taste
1/3 lb. pasta, cooked

Heat olive oil in a pan and add onion & garlic, sauté over medium heat until tender. Add chicken, sprinkle with Garam Masala and curry powder on the chicken, stir to combine. Add tomatoes and coconut milk, stir. Simmer. Add salt to taste. Add cooked pasta to combine.

Very interesting. Reminded me of travel in Thailand, India, etc. Intensely flavored but oddly "needing something" on the plate so I used a generous shaking of Turkish hot red pepper and another tried some fresh grated Parmesan. I forgot to add the peanut butter and chopped peanuts as suggested at the beginning of the recipe however.

Will definitely make again trying the peanuts.

I did not have Garam Marsala but it was simple enough to make in a mortar and pestle. Excepting the cardamom I had all of the necessary whole fresh spices on hand.

Regarding pasta I used farfalle (bow tie). Pehaps not the best choice but it worked reasonably as you do need a shape that works to capture some of the resulting extremely light (in consistency) sauce.
