BEEF AND POTATO LOAF 
4 c. finely chopped potatoes
1 tsp. salt
1/8 tsp. pepper
1 tsp. parsley flakes (optional)
1/2 c. cracker crumbs or rolled oats
1/4 c. chopped onion
1/8 tsp. pepper
1 tbsp. finely chopped onions
1 lb. ground lean beef
3/4 c. evaporated milk
1/4 c. ketchup or chili sauce
1 tsp. salt

Arrange peeled, sliced potatoes in a 3 quart baking dish. Sprinkle with 1 tablespoon chopped onion and salt and pepper. Add parsley flakes, if desired. Mix ground beef, milk, cracker crumbs, ketchup, 1/4 cup chopped onion, 1 teaspoon salt, and 1/8 teaspoon pepper. Spread evenly over potatoes. Bake, covered, at 350 degrees for 1 hour or until potatoes are tender. 4 to 6 servings.
