ZUCCHINI BREAD | |
3 eggs 1 1/3 c. sugar 1 c. oil 1 tbsp. vanilla 2 c. raw, peeled, grated zucchini 1 tbsp. grated orange peel 3 c. all-purpose flour 1 tsp. salt 1 tsp. baking soda 1/4 tsp. baking powder 2 tsp. cinnamon (I use more) 1/2 c. nuts, chopped (optional) Preheat oven to 325 degrees. Grease and flour two bread loaf pans. In a large bowl, beat the eggs until light and fluffy. Add the sugar and beat well. Mix in the oil. Stir in the vanilla, zucchini and orange peel, then set mixture aside. In separate bowl, combine the flour, salt, baking soda, baking powder and cinnamon. Add the dry ingredients to the first mixture and mix well. Add the nuts, if desired. Pour into the two loaf pans and bake at 325 degrees for 50-60 minutes. Remove from pan at once and cool on rack. |
