ZUCCHINI CAKE OR BREAD 
4 eggs
3/4 c. vegetable oil
1 1/2 tsp. baking powder
3/4 tsp. salt
2 c. zucchini (unpeeled and drained through strainer)
1 1/3 c. sugar
3 c. flour
1 tsp. baking soda
3 tsp. cinnamon
3 tsp. vanilla
1 c. nuts may be used

Beat eggs, gradually beat in sugar then add and beat in oil. Combine dry ingredients, add to egg mixture alternately with zucchini which has been put through grinder and drained of most of the juice.

Stir in walnuts and vanilla. Turn into greased and floured 9 inch tube pan (angel food pan). Can also be baked in 2 bread loaf pans. Nuts are best in bread loaf pans if preferred. Bake at 350 degrees for 50 minutes to 1 hour.
