SALMON LOAF 
1 lb. can salmon
3/4 c. milk
1/4 c. chopped green peppers
2 eggs, well beaten
1 1/2 c. dry bread crumbs
2 tsp. chopped onions
1/4 c. melted butter
2 tbsp. flour

Drain salmon reserving fluid for sauce. Flake and remove skin. Add milk, green peppers, onions, eggs, bread crumbs and butter. Mix well. Put into greased loaf pan. Pack tightly. Bake 50 minutes at 350 degrees.

Meanwhile, make sauce. Melt 2 tablespoons butter. Add flour; blend well. Add 3/4 cup milk and liquid from salmon. Stir constantly on low heat until thick. Serve with salmon loaf.
