POLITIKOS 
1 c. oil
1 c. fine semolina
1 c. thick semolina
3 c. sugar
4 c. water
Cinnamon

Put oil in a saucepan to heat. Add the semolina and stir constantly until semolina is lightly brown.

In the meantime, put sugar with water in another saucepan to boil 10 minutes. When semolina is brown, mix with the sugared syrup. Sprinkle with cinnamon and lower the heat, continue stirring until it thickens. Halva is ready when easily detaches from pan. Place halva in a springform cake tin and when it is cool, remove to a flat dish and sprinkle with cinnamon. You can add almonds or pine nuts which can brown at the start.
