ZUCCHINI PARMESAN 
3 med. zucchini
1 (7 oz.) can grated Parmesan cheese
1 tsp. butter, butter, or olive oil (per zucchini half)

Wash zucchini, cut off ends, slice lengthwise into halves. Place zucchini in 1/4 cup water in Corning dish or pot with lid. Bring to a boil, simmer 5 minutes. Drain any remaining water from zucchini. Place zucchini in baking pan or on a cookie sheet.

Place 1 teaspoon of butter, butter or olive oil on each half. Generously sprinkle with Parmesan cheese entire length of zucchini slice. Heat oven to broil or 550 degrees. Broil approximately 2 to 3 inches from broiler for 5 to 7 minutes. Serve hot.
