PORK WITH MAPLE-VINEGAR SAUCE 
1 lb. boneless pork loin chops, cut thin
Fresh ground pepper
1/4 stick butter
1/4 c. minced shallots or green onions
2 tsp. Dijon mustard
1 c. chicken broth
2 tbsp. pure maple syrup
2 tbsp. Balsamic vinegar

Flatten pork. Season with pepper. Melt butter over medium-high heat. Saute pork until brown. Transfer to plate. Add shallots to same skillet. Cook 1 minute.

Mix mustard and broth and simmer 5 minutes. Stir in maple syrup and vinegar. Simmer until liquids are reduced, about 5 minutes. Return pork; simmer until tender.

Would give this 50 stars if possible. It has permanently replaced a glazed pork chop recipe I have used for years.

As like most - I had to substitute with what I had on hand.

Used Beef broth instead of chicken... and used Raspberry syrup in place of Maple... This was outstanding, to say the least.

This sauce is so outstanding, am thinking about using this for additional meats for the future. Chicken tenders ~ Meatballs, etc., Brown meat being used in butter - then proceed with recipe ~ ending up simmering it in the sauce.
