CAMMY'S TEXAN CHICKEN AND ARTICHOKE CASSEROLE | |
2/3 c. coarsely cut up cooked chicken 2/3 c. instant rice 2/3 c. hot water 1 tsp. instant chicken bouillon 1/4 c. sliced pimiento stuffed olives 1/4 c. shredded Swiss cheese Dash pepper 1 (6 oz.) jar marinated artichoke hearts, drained & cut into halves Mix all ingredients in a microwaveable 1 quart casserole dish. Cover tightly; microwave on High 3 minutes; stir. Continue cooking on High until liquid is absorbed (about 2 to 3 minutes). Sprinkle with paprika if desired. |
