QUAKER OATMEAL COOKIES 
2 c. brown sugar
1 c. shortening
2 eggs, beaten
2 c. flour
3 c. quick Quaker oats
1 1/2 tsp. baking soda
1 tsp. salt
2 tsp. vanilla

Cream sugar and shortening. Add eggs and vanilla. Sift flour, soda and salt. Stir in oats and dry ingredients into batter. Beat well. Put 1/4 cup sugar into small bowl. Dip fingers into sugar, pinch off dough, the size of a walnut, and roll. Place balls on greased cookie sheet 3 inches apart. Bake at 375 degrees for 12 to 15 minutes.
