1 box Duncan Hines butter cake mix
4 eggs
1/2 c. oil
1 can mandarin oranges (do not drain)
1 c. coconut
1 c. nuts

Mix all ingredients together, stirring thoroughly. Grease and flour 2 (8") round cake pans. Pour cake into pans and bake at 350 degrees for 30 to 35 minutes. Cool and ice each layer. You may use a 9"x13" pan.

ICING:

1 (9 oz.) Cool Whip
1 sm. pkg. vanilla instant pudding
1 sm. can crushed pineapple, do not drain
1 c. coconut
1 c. nuts

Blend all ingredients together and frost your pickling pig cake when cooled.
