CHEESE MUFFINS 
1 1/2 c. flour
1/2 c. cornmeal
1/4 c. sugar
1 tbsp. baking powder
1/2 c. grated cheddar or Swiss cheese
1 c. milk
1/2 c. creamed cottage cheese
1/4 c. melted butter
1 egg, beaten

Stir together dry ingredients in large bowl. Stir grated cheese into dry mixture. In another bowl, mix remaining ingredients. Add to dry mixture and stir gently, just until a moist mixture is formed. Bake in buttered muffin tins at 400 degrees for 25 minutes. Makes 12 medium muffins.
