PICANTE MUFFINS WITH CHEESE CENTERS | |
1 (4 oz.) cream cheese 1/3 c. bacon bits 1 c. yellow cornmeal 1 c. flour 1/4 c. sugar 1/4 tsp. salt 4 tsp. baking powder 1 c. picante sauce 2 eggs, beaten 1/4 c. oil Dash of garlic powder (optional) Lightly grease 12 muffin cups. Cut cream cheese into 12 squares. Put bacon bits on small plate and roll each piece of cheese in bacon bits to cover. Set aisde. Mix together dry ingredients in medium bowl. Add picante sauce, eggs and oil. Stir until ingredients are just moistened. Put one tablespoon of batter in each muffin cup. Place coated cheese in center of batter. Top with remaining batter. (Muffin cups will be almost full.) Bake at 425 degrees for 15 minuts. Let stand 10 to 12 minutes before serving. Cheese will be very hot. Freezes well. Yield: 12. |
