ZUCCHINI BREAD 
4 eggs
2 c. sugar
1 c. oil
3 1/2 c. plain flour
1 c. raisins
1 c. nuts
1 tsp. cinnamon
1 1/2 tsp. salt
1 1/2 tsp. baking soda
3/4 tsp. baking powder
1 tsp. vanilla
2 c. grated zucchini

Can use dates in place of raisins.

Beat eggs; add sugar and oil. Mix dry ingredients and add alternately with grated zucchini. Add vanilla, raisins and nuts. Bake at 325 degrees for about 1 hour. Makes 2 loaves or 3 small loaves. (I mix eggs, sugar, oil and half of dry ingredients in the mixer then add remainder by hand mixing.) Do not peel zucchini. Grate all but the center with seeds.
