6 sm. zucchini
1/4 c. butter, melted
2 tbsp. lemon juice
2 tbsp. vinegar
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried whole thyme

Slice each zucchini lengthwise into 1/4" slices, taking care not to cut through the stem ends. Place zucchini fans into a lightly greased shallow pan. Combine remaining ingredients, stirring well. Brush butter mixture over the zucchini. Bake at 350 degrees for 25 to 30 minutes or until tender, basting occasionally. Yield: 6 servings.
