1 kiwi fruit, pared & cut up
1 med. ogen or honeydew melon
16 lg. strawberries, halved
2 lg. oranges, pared & sectioned
8 mint leaves for garnish

1. In a food processor or blender, puree the kiwi. Set aside.

2. Cut the melon in half and remove seeds. Cut each half into 4 wedges and remove the skin.

3. With cavity side up, starting 1" from stem end, cut melon wedges into lengthwise slices leaving the stem end intact to hold slices together.

4. Gently fan out the slices. On each of 4 plates, arrange 2 melon fans opening each fan in opposite directions.

5. Pile 8 strawberry halves at the base of each melon "V".

6. Decoratively arrange 3 orange segments on each side of the strawberries.

7. Spoon a little kiwi puree between the fanned slices of melon.

8. Garnish with 2 mint leaves beneath the top strawberries. Yield: 4 servings.
