1 lb. sm. red potatoes, peeled and sliced 1/4 inch thick (about 3 c.) 1 tbsp. vegetable oil 1/2 tsp. salt 1 tsp. butter 1 tsp. chopped garlic Freshly ground black pepper (4 turn of the mill) 2 tbsp. chopped fresh parsley leaves 1. Put the potatoes in a saucepan, cover them with water, and bring to a broil. Drain. 2. Heat the oil in a nonstick frying pan. Add the potatoes and salt. When the potatoes are lightly browned and almost ready, melt in the butter. Sprinkle the potatoes with the garlic and pepper. Saute briefly but do not brown the garlic. Add the parsley at the last minute. Makes 6 servings. Calories per serving: 76. |
