ZUCCHINI BREAD 
2 1/2 c. sugar
3 eggs
2 c. Wesson oil
2 tsp. vanilla
2 c. grated zucchini
1 c. crushed pineapple
3 c. self-rising flour
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1 c. nuts
1 c. raisins

Beat together eggs, oil, vanilla, sugar, pineapple, zucchini, flour, cinnamon, nutmeg, nuts, and raisins. Bake in greased loaf pan at 350 degrees for 90 minutes or until tests done. Cool 10 minutes before removing from pan.
