CHILE CHEESE HUSH PUPPIES | |
3/4 c. yellow cornmeal 1/2 c. all purpose flour 1 1/2 tsp. baking powder 4 oz. shredded Monterey Jack cheese 1 tbsp. chopped green onion Salt to taste 1/2 c. milk Vegetable oil 1/4 tsp. red pepper flakes 1 (4 oz.) can chopped green chiles 1 egg Combine all ingredients except egg, milk and vegetable oil in a large bowl. Combine egg and milk and stir into dry ingredients until just moistened. Heat 3 inches of oil to 375 degrees, drop batter by tablespoon into hot oil. Fry for 3 or 4 minutes, turning once, until golden brown. Drain on paper towel. Makes about 2 dozen. |
