GRATED SWEET POTATO PUDDING 
2 c. grated raw sweet potatoes
1 c. milk
1 c. sugar
2 eggs, slightly beaten
2 tbsp. melted butter
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. salt

Grate the raw sweet potatoes into milk to keep them from turning dark and other ingredients in order given; sugar, eggs, butter, cinnamon, nutmeg and salt. Pour into a well greased 1 1/2 quart casserole. Bake in a 350 degree oven for 1 hour. Serve warm, cold pudding may be sliced and serve with cream as sweet potatoes pone.
