DELMARVA BARBEQUED CHICKEN | |
1 tsp. salt 1 tsp. pepper 2 tsp. poultry seasoning 2 chickens, split in half 1/2 c. vegetable oil 1 egg, well beaten 1 c. cider vinegar Combine salt, pepper and poultry seasoning in a small bowl. Add vinegar, oil and egg; mix well. When coals are ready, put chicken on the grill and baste with sauce. Keep mixing sauce as chicken cooks, because the sauce tends to separate. Cook chicken slowly over medium coals 1 1/2-2 1/2 hours, or until juices run clear. Cooking time will depend on the size of the chicken. Baste chicken frequently with sauce and turn chicken frequently. Note: To serve 8, cut each half in 2 with poultry shears or a sharp knife. |
