EGG CASSEROLE 
This reheats well in microwave.

6 eggs
1 1/2 env. Italian dressing mix (Good Seasons)
1 (16 oz.) bag shredded Monterey Jack cheese
8 oz. small curd cottage cheese
3/4 cup chopped green pepper
1/2 cup all-purpose flour
1 1/2 tsp. baking powder
1/2 cup (1 stick) melted butter

Beat eggs and powdered dressing in large bowl. Stir in cheeses and green pepper. Stir in flour, baking powder and butter. Pour into a 9x13-inch baking pan. Bake at 375°F for 35 minutes. Insert knife in center of casserole to check if done.

Serves 8 to 10.

Since microwave ovens vary in power, you may need to adjust your cooking time.
